Yes freezing it is fine, the pasta tends to go a bit more chewy but that is always the case with reheated pasta and not just when it’s frozen. You wouldn’t need any water if you’re not cooking the pasta in the sauce – but you may not need as much tomato puree / paste either so use less and build it up if you think it needs to be thicker.
